20-Minute One-Skillet Keto Frittata!

I don’t know about y’all, but I’m busy as all getout. Real talk- meal prep is one of the hardest aspects of a ketogenic lifestyle! If I can get several nutrient-dense meals out of one skillet, I’m golden! One-skillet meals are an absolute game changer! This frittata takes 20 minutes, and I can make 6 meals out of it! For this recipe, you really can make it your own too. Here are the basics!

·       12 eggs

·       3 tablespoons heavy whipping cream

·       ½ teaspoon salt

·       1 cup (4 ounces) grated or crumbled cheese

·       1 cup crumbled or chopped breakfast sausage (Pederson’s is THE BOMB and W30 compliant)

·       3 to 5 cups vegetables or greens of choice

·       1 tablespoon butter

·       Garnish: Chopped or torn fresh, leafy herbs (basil, parsley, cilantro, chives, or dill)

1)    Preheat the oven to 425 degrees Fahrenheit

2)   Crack the eggs into a medium mixing bowl. Add heaving whipping cream and the salt. Whisk just until the egg yolks and whites are blended. Whisk in cheese if you’re adding cheese

3)   Warm butter in a 12″ cast iron skillet or oven-safe non-stick skillet until melted. If you’re using sausage, add now and cook until browned. Set aside when browned, but leave the fat in the pan. Then add the vegetables, starting with dense textures like chopped onions or tomatoes. Cook until those vegetables are tender, then add any garlic or greens, and cook until wilted and onions are translucent. Add the sausage back to the pan

4)   Give the eggs once more whisk then pour the mixture over the vegetables and sausage. Use a spatula to combine ingredients and distribute everything evenly in the pan.

5)   In about 30 seconds to one minute, the outside edges of the frittata will start to turn to a lighter color.  This is your cue to carefully transfer the frittata to the oven. Bake for another 7 to 14 minutes, (watch it carefully, it really depends on your oven), until the eggs are puffed, do not appear wet, your knife comes out clean if you poke the center. Remove the frittata from the oven and place it on a rack to cool. Garnish with herbs, slice into servings, and ENJOY!
